At the end, add the whipped whites to the batter and mix again. If desired, add finely chopped dill to the dough - it will give the dish a special piquancy.
  • Heat a frying pan and pour some vegetable oil into it. Dip the fish pieces into the batter and then fry on both sides with the lid closed until they acquire a golden hue.

The quality of frozen fish largely depends on how it is frozen. Fish is 70% water. The longer it is stored, the more ice will form on it. Eventually, the fish's flesh will begin to deteriorate.

Fish with firm, fatty flesh, such as king salmon, respond better to freezing than fish with lean flesh, such as haddock. Lean fish of the cod family, which includes whiting, cod, haddock and hake, contains trimethylamine oxide - chemical compound, which breaks down the odorous substances dimethylamine and formaldehyde. This means that when this fish is first frozen and then thawed, it begins to emit "fishy" aromas. When thawing, cod fish often still acquire a somewhat spongy and dry texture due to the fact that the proteins contained in the fish's flesh are destroyed during freezing.
