How to cook meat pies from yeast dough in the oven

Let's start preparing the dough. Main secret good test- make the yeast work. To do this, heat the milk (100 ml) to a warm temperature (no more than 40 degrees, otherwise the yeast will die!). If you dip your finger in such milk, it should feel pleasant, comfortable, and warm.

Pour the yeast into warm milk, add 2 tbsp to the dough. spoons of sugar, stir. It will take 20-30 minutes for the dough to increase in size and be ready to rise the yeast dough. Place the dough in a place without drafts.

While the dough is rising, prepare the filling. Place the boiled meat (I have pork, 300 grams) in a blender bowl, after dividing it into pieces.

Turn on the blender and turn the pieces into crumbs. Add fried onions. Mix the ingredients, salt and pepper.

Forming meat pies

Grease your hands with a small amount of vegetable oil so that the dough does not stick to your hands and tear off small pieces, forming a ball. Then we stretch the ball into a flat cake so that it is convenient to lay out the filling. Place one tablespoon of meat filling in the center of the flatbread. Bring the edges of the dough together and form a pie.

On a baking sheet sprinkled with flour, place the pies, seam side down, at a distance of 4-5 cm from each other.

How to cook meat pies in the oven

Let's start with the test. I want to warn you right away that the dough is just super! Both in kneading and in cutting. Soft-soft. Just for everything to work out, you need to strictly observe the proportions of the products. Measure out 100 ml of water. Take a cup, pour yeast and sugar into it, and mix lightly. Fill in a third of the collected water. We set the rest aside - we will knead the dough on it later.

Pour flour into a bowl, pour in yeast. We rinse the yeast cup with the remaining water so that nothing goes to waste, pour in salt, pour in oil and start kneading the dough.

It may be sticky at first. We don't pay attention! Knead calmly, stretching and folding the dough with both hands. After five minutes it will stop sticking. We continue to knead, and after a couple of minutes a joyful feeling will arise: wow, what a pleasant dough! Soft, lively, non-sticky, even somehow airy. Just at this moment you can let the dough rise. I always grease the bowl with a few drops of vegetable oil and then roll the bun in it. This way the dough is guaranteed not to dry out.

2. Filling

For the filling, raw meat must be minced through a meat grinder. I skip that step because I already have ready-made minced meat.

Chop the onion finely, pour vegetable oil (2-3 tablespoons) into a frying pan, add the onion and fry, stirring, until golden brown. As you see in the photo.

Then put the minced meat in the same frying pan, mix with the onion and fry for five minutes until the minced meat changes color. Then fill it with a quarter glass of water, stir, reduce the heat and simmer without a lid until all the liquid has evaporated. Then add salt and pepper to taste. The filling is ready. It turns out very juicy. And in meat pies this is the main thing.

3. Modeling and baking pies

Place the finished dough on the board. It is so elastic, soft and non-sticky that there is no need to dust the board with flour. Roll out the dough into a sausage and mark the cut locations with a knife. I have already said that 1 cup of flour makes dough for 8 pies. So you can first visually divide the dough in half, then each half in half again, and in half again. You will get 8 parts. We make cuts.

Roll the resulting pieces into buns. To do this, put the dough on the board, pull it back and pick it up from the edges and wrap it in the center. We do this 3-4 times.

There is no need to roll out the buns. In general, I haven’t used a rolling pin for a long time. Just take the bun in your palm and stretch it from the edges with your fingers.

It turns out to be a round cake. We put it on it meat filling. Two heaped teaspoons.

Now how to make a pie correctly. You must first grab the cake from two edges and pull them together in the middle. Then pinch to the edges. We pinch tightly. But you probably felt how well the dough sticks together. When baking, not a single pie came apart! This is how the pies turn out.
