Pork meat rolls - general cooking principles

What are rolls? This is a meat dish where the filling is tightly wrapped in a beaten layer of pork rubbed with spices.

To prepare the rolls, use lean pork, which is thoroughly washed, dried and cut into thin steaks. Afterwards, the pieces of pork are wrapped in film and beaten thoroughly. It is permissible to use minced pork or minced meat instead of a whole piece. In these cases, the mass is thoroughly mixed, adding spices and salt, placed on cling film and leveled. Next, the layer is tightly rolled up in the form of a roll.

To enhance the taste, you can add any favorite filling before wrapping: fried mushrooms, onions and carrots, sweet pepper, tomatoes, eggplants, other types of meat, sausages, cheeses, herbs, dried fruits and even nuts - it all depends on your imagination and desire to experiment.

Don’t forget about spices, they will enhance and emphasize the taste of the dish: herbs, oregano, paprika, turmeric, pepper, garlic and other ingredients will make it brighter and richer.

To prevent the rolls from falling apart during baking, it is recommended to tie them with strong culinary threads or twine. It is also permissible to secure the rolls with toothpicks. It is recommended to lay out the prepared products for cooking with the seam down.

Pork meat rolls - tricks and useful tips

When preparing a dish, give preference to young meat; it makes the rolls both tastier and juicier. If you have the meat of an old animal, then it is better to make rolls from chopped or twisted meat, or the product should first be steamed a little before baking.

To make the formed roll look beautiful and appetizing, place the prepared layer on a towel or cling film. Lifting the edges of the film, holding the meat itself with your hands, twist the roll tightly.

To give the dish a special flavor, add liquid smoke while baking.

If you decide to boil or stew pork meat rolls, keep an eye on the water level in the pan; it should always cover the product completely. And from the remaining broth you can then cook a light soup.

The meat roll can be served hot or cold, with or without a side dish.

  • pork pulp 350-400 g,
  • carrots - 1 large root vegetable,
  • onion – 1 head,
  • pickled cucumbers – 2 pcs.,
  • garlic 3-4 cloves,
  • sour cream – 200 g,
  • seasoning or salt
  • odorless sunflower oil for sautéing and frying.

Cooking process:

Let's start with meat. We wash the pork, blot it with a napkin, cut it into medallions 2-2.5 cm thick. We beat each of them well.

I don’t put a bag on the pork, but hit it directly on the meat. We add a little salt to the already broken pieces on both sides; you don’t need much, because the main thing is not to over-salt. Then add the squeezed garlic. And for now we move it to the side.

For the filling, chop the onion and grate the carrots on a medium grater. Transfer to a separate pan. Let's pour a little in there sunflower oil and water, salt.

Simmer over low heat until almost done. Place on a plate and add grated cucumbers. If you love green olives, you can add them to the filling.

When everything is prepared, pour oil into the frying pan and set to heat up. Before you put the pork rolls in the oven, you need to deep fry them.

So, put the filling on the chopped meat along the length of the entire piece. Roll it up and tie it with thread.

Try to leave a long tip so that the threads can be easily removed from the meat before serving. Carefully throw into hot oil, wait for them to brown, then place the rolls in a deep heat-resistant frying pan, roasting pan or mold.

Pour water (about 0.5 cups) into the sour cream, mix, and pour the sauce over the rolls.

Place in a warm oven for 25-30 minutes, cook at 170 degrees.

I served mashed potatoes as a side dish for this dish. You can show more imagination and do something different. Bon appetit!

    Wash the meat thoroughly and dry with a paper towel. Cut the pork into chops, into slices about 1 cm thick. Beat well with a meat mallet (so that when beating, pieces and meat juice do not fly into the different sides– you need to put a plastic bag on top).

    Wash the prunes for the rolls and pour boiling water over them for 10 minutes to steam them. Then drain the water and dry the dried fruits with a paper towel.

    Cut the onion (1 piece) into cubes and fry in vegetable oil until almost ready.

    Take a pork chop, salt and pepper to taste.
    Place 3-4 prunes on one side of the roll, add sautéed onions.

    Roll up the meatloaf as tightly as possible.
    We pin (wrap) our rolls with skewers (threads).

    When all the rolls are ready, place them in a preheated frying pan with vegetable oil.
    Fry on all sides until golden brown.
    Then cover with a lid and simmer for 15 minutes.

    The remaining onion can serve as gravy, which we fry (chopped) in vegetable oil. You can also add a few sour berries or prunes to the onions.

    You can serve meat rolls with prunes with any side dish. I suggest you serve it with mashed potatoes. Place some sautéed onions and prunes on top of the rolls. You can decorate with greenery. It is advisable to remove the toothpicks before serving.

    The meat is thinly cut into slices and beaten as usual. If desired, marinate in spices, wine, onions or mayonnaise (meat pieces can be left in the marinade in the refrigerator overnight).

    Cut the cheese into long, thick pieces.
    I also used sautéed onions in the filling; it makes the meat rolls juicy.
    Salt and pepper each chop to taste (if there was no prior marinating).
    Place a block of cheese on one side of the meat, add fried onions.

    We tightly roll up the meat roll, secure it in several places with skewers or tie it with thread.

    When stewing, the cheese may seem a little like meat rolls, you can see this in the photo. It's OK.

    Adviсe:

    1. You can take more garlic if your household loves spicy dishes.
    2. When using Dijon mustard, you do not need to grind the sauce; stir lightly so as not to crush the grains.
    3. You can decorate the finished meat with your favorite herbs; cilantro and dill are great.

    Rolls with prunes

    As a filling for pork rolls, you can use not only hard cheese or vegetables, but also fruits. Even better are dried fruits, where prunes come first. The sweetness of the fruit complements the taste of the meat, and prunes make the pork softer.

    Ingredients:

    • dried prunes – 200 gr.;
    • garlic – 1-2 cloves;
    • salt;
    • rosemary
    • dill;
    • spices for pork;
    • mayonnaise.

    Preparation:

    Prepare prunes. Fill with water, depending on its condition, leave for 30 minutes to 2 hours. Rinse thoroughly, discard in a colander, and leave until the water has completely drained. Cut into pieces.

    While the prunes are soaking, begin preparing the meat. Cut the pork loin into neat layers. Use a kitchen hammer and beat each piece, being careful not to damage it.

    Salt, sprinkle with spices and salt. Wash and chop the dill. Peel the garlic, then rinse and chop finely. Coat the pieces of pork with mayonnaise. Place pieces of prunes on mayonnaise, sprinkle with garlic and dill. Roll using wooden toothpicks to secure each meatloaf.

    Bake in foil in the oven. Cooking time: 30-40 minutes, depending on the quality of the meat. Bake, first covering completely with foil, then uncovering until golden brown. Sprinkle with rosemary.

    Adviсe:

    1. Garlic can overpower the taste of prunes, so you can skip the spicy seasoning.
    2. Baked pumpkin goes especially well with this dish. You can place pumpkin pieces in foil 30 minutes after baking the meat rolls. Leave for another quarter of an hour.

    Recipe for rolls with mushrooms, baked in the oven

    Another popular filling option for pork rolls is mushrooms. Perhaps such a dish will be quite heavy on the stomach, so it is recommended to prepare it for an adult table. To reduce the calorie content of the dish, an option is offered in which the rolls are not fried, but baked in the oven.

    Ingredients:

    • pork (loin) – 0.5 kg;
    • mushrooms, in in this case champignons – 200-250 gr.;
    • carrots and onions - 1 pc. + vegetable oil for sautéing;
    • salt;
    • black hot pepper.

    How to cook:

    Preparing the dish begins with the filling, since this will take the most time. Boil the champignons, cut into slices. Sauté carrots and onions in oil ( exactly in that order).

    Mix with mushrooms, cool. Cut the fillet into portions. Sprinkle with salt and hot pepper. Place the filling on the edge of the layer of meat and roll it into a roll. Do the same operation with the remaining layers of meat. Carefully transfer the rolls to a baking rack. Place in the oven. Baking time – from 20 minutes.

    Adviсe:

    1. The filling can be made from fresh, boiled or fried mushrooms. You can use dry (pre-soaked) or pickled.
    2. Since the vegetables are sautéed in oil, there is no need to add mayonnaise.
    3. You can make the dish a little more complex by adding a block of cheese inside.
