I make pork with mushrooms baked with cheese in the oven when I especially want to please my youngest daughter, this is one of her favorite dishes.

It’s a paradox, but pork and mushrooms alone don’t really appeal to her, but it’s the meat with mushrooms that absolutely delights her. Therefore, I constantly experiment with this combination. Either I make meat rolls with mushrooms, or zrazy, or bake them in a pot with potatoes. If only the child was happy!

This recipe is probably the simplest of all. It’s very difficult to cook something that tastes bad here; you really have to try hard to do it. Even an inexperienced housewife should be able to do everything right.

Now about the cooking sequence.

We will need:

  • 600 grams pork
  • 300 grams of wild mushrooms
  • 300 grams of cheese
  • 6 tablespoons mayonnaise
  • 100 ml soy sauce
  • vegetable oil for greasing the pan

First I'll prepare the meat. Today I have carbonade, although I usually use pork neck. But this part of the pork is very tender, with a small amount of fat, which is what you need.

I'll cut it into equal pieces:

If you overdo it, the meat will turn out dry, and this cannot be allowed.

Now you need to marinate it. I usually pour a small amount of soy sauce on it, then it will definitely become soft and juicy, acquire a characteristic taste and a beautiful color:

There will no longer be any need to salt or pepper the meat, it will absorb exactly as much sauce as it needs, and you won’t have to worry about over-salting or under-peppering it, for example, it will be just right!

While the meat is marinating, which should take at least half an hour, cook the mushrooms:

Today I cook with store-bought frozen assorted wild mushrooms, but sometimes I use champignons instead, it doesn’t matter.

Although wild mushrooms, even store-bought ones, still win, if only due to their indescribable aroma.

I first defrost them, then boil them in salted water for thirty minutes:

I always put a lot of cheese, it seems to me that there is never too much of it, and the more you put, the tastier the meat will be.

Let's mix it with mayonnaise, this will be our meat coat:

You can add garlic cloves pressed through a press to the cheese mixture, but today I don’t do this, I don’t want to interrupt the taste of the mushrooms.

By the way, if I were making this kind of meat for guests, I would definitely overcook the mushrooms and onions first, but my daughter doesn’t eat onions, so I make concessions to her, and I advise you not to neglect the onions, with them, in my opinion, it will be much tastier and even more fragrant!

Everything is ready, I preheat the oven to maximum temperature, and in the meantime I begin to place the meat in a baking sheet greased with vegetable oil:

Now I reduce the heat in the oven to 200 degrees and put a baking sheet with meat in it. Wait thirty to forty minutes for the final result. As soon as the cheese has melted and browned, I turn off the oven and give the meat another ten minutes so that it reaches condition.

Cut the meat into portions across the grain. The thickness of 1 piece should be approximately 1 cm. This rule must be observed because the meat in this recipe does not need to be beaten with a hammer, and a piece that is too thick may not be baked, and juice will leak out of a thin piece and the meat will turn out dry.

Peel the garlic and cut into slices. A third of a kilogram of mushrooms and a large onion are finely chopped and fried: first, the champignons, when they stop releasing juice, add the onion. Pork with mushrooms and cheese cooked in the oven will be even tastier if, after the onions have turned golden, you add small cubes of three apples into the roast. A piece of soft butter is placed into the already prepared “minced meat”, and the mass is kneaded. The filling is added to each slice of pork, sprinkled with pepper and salt, the meat is rolled up and secured with a toothpick. The pieces laid out on a baking sheet are placed in a hot oven for half an hour. Afterwards, the rolls are sprinkled with grated cheese and returned for another ten minutes.

This dish is commonly known as “French Meat”. How much it corresponds to the original recipe is unknown, but the end result suits everyone. Pork (kilogram) is cut into pieces of arbitrary size, beaten and peppered. Some cooks also fry it a little, but most put it on a sheet raw. A third of a kilo of champignons are simmered in slices over high heat until the color changes. 0.5 kg of tomatoes are sliced ​​into thin circles. Tomatoes are placed on the laid out meat, champignons are placed on them, and the top is covered with cheese shavings. It takes about half an hour to prepare. If the meat is cut too thick, keep the baking sheet in the cupboard for about forty minutes.

Pork with mushrooms and potatoes

A very interesting way to cook pork on a potato bed and with mushrooms. The pulp (0.5 kg) is cut into slices, lightly beaten, sprinkled with a little red wine and sprinkled with salt and seasonings: rosemary, peppers, curry. While you peel 0.5 kg of potatoes, it will be saturated with all this and will be even more aromatic and juicier. The same number of champignons can be fried in parallel with the rings of four onions. Now you can assemble the dish: thin potato circles are laid out on a greased sheet (you can do it in several layers, just so that they lie in stacks). After salting, the meat is laid out - it is better in one layer so that it is baked. The roasting is distributed on top - and into the oven. Roasting the pork will take about half an hour. It is worth noting that recipes with pork are very diverse. However, most often it is baked either under cheese or in foil. The only exception is boiled pork. This is explained by the fact that in the “shell” it certainly will not be overcooked. But you can make a different “packaging”! For it, dough is kneaded from a kilogram of flour (if you have a 1.5-kilogram piece of pork). Ingredients are the same as dumplings or dumplings: flour, water, eggs, salt. The meat is cut into small slices, salted, peppered and combined with finely chopped onion (1 kg). It will be nice if you let the “minced meat” sit for half an hour for mutual impregnation. The finished dough is divided into 4 parts. Each piece is rolled out into a fairly thick cake and coated with butter. Then they roll out together. The result is a very fluffy base, like a puff pastry, but quite elastic and not torn. The flatbread is placed on a sheet, the filling is placed on it, a little melted butter is poured over it and the edges are sealed. It looks like a big pie.
